Copycat Alice Springs Chicken

Copycat Alice Springs Chicken by The Mommy Games

Living in NYC, we have a plethora of delivery food options. Ranging from fancy steak & lobster to greasy Mexican, practically anything you want can be delivered right to your door in this fabulous city. In one of our old apartments, we lived just blocks from an Outback Steakhouse and would have that delivered at least a couple of times a month. I’m slightly obsessed with their Alice Springs Chicken dish. Chicken, cheese, bacon, mushrooms – what’s not to love? This recipe is darn near identical to what you get in the restaurant and it’s simple to boot. I always serve it along with a pile of spiced fries and extra honey mustard sauce. De-freakin-licious.

Brussels Sprouts with Bacon

Brussels Sprouts with Bacon by The Mommy Games

Brussels sprouts are one of my go-to veggie sides, so I thought I would share one of my favorite ways to prepare them before they are totally out of season. Anything that involves bacon is usually a hit in our house, but I was still surprised to see my toddler gobbling these up. He’s exceptionally weary of anything green (he seriously will pick out tiny little pieces of herb from his soup!), so the fact that I can get him to eat a relatively large helping of these without promising to deliver 5-hours worth of Thomas on the tv makes this a win in my book. These are also a guaranteed hit with adults and instantly elevate a casual weeknight dinner. Hope everyone has a fabulous Spring weekend!

Veggie & Bacon Breakfast Hash

Every couple of weeks, I will clean out my veggie drawer by either making a fritatta or a hash like this one. They both make for fantastic dinners – quick, easy, warm and filling. And there’s always something fun about having breakfast for dinner. This would, of course, make an amazing breakfast as well (especially if you’ve had a few too many cocktails the night before). And I doubt you would need lunch afterwards! We still (thankfully) have power here in nyc, but the pickins at the grocery store were slim, so this was the perfect meal to use up what we already had on hand. I’m sure a few fellow New Yorkers could benefit from a meal like this. Have a great weekend everyone, and a special good-luck to all the marathoners out there – although I’m still a bit torn as to whether or not the marathon should go on, we will be out cheering!
