S’mores Icebox Pie

Is there any more quintessential summertime dessert than s’mores? Just type “s’mores” into Pinterest and you will be privy to a variety of desserts that have all gotten their inspiration from this much loved classic. There’s just something about the whole graham cracker, gooey marshmallow, and chocolate combo that wins over adults and children alike. This pie combines all of that, with the addition of ice cream. In my book, everything is better with a little ice cream. This took no more than 10 minutes to put together and there’s no actual cooking involved, just a little microwaving and assembly. This was such a light and refreshing dessert, with just a hint of decadence from the chocolate and marshmallow layers. A great spin on a classic, and one I know your family will love.

Homemade Ice Cream Cake

Ice cream cakes are now officially my favorite desserts to make. Nearly zero effort or time involved, endless flavor and mix-in possibilities (think frozen yogurt toppings endless), and ridiculous deliciousness. And you don’t have to turn on the oven, which is a major plus in the summer. I actually made this particular cake a few weeks ago for my brother-in-law’s birthday. He doesn’t like traditional cake (I know, I know) so I was racking my brain to come up with something different that we could still stick a candle in. Et Voila. Make this. Then, when you’ve eaten it all a day later, make another one with whatever ingredients your mind can dream up. You won’t think of buying one from DQ ever again. Make whatever alterations to the ice cream and fillings you want – there is no going wrong here!

Mint Chocolate Cookies

I just can’t seem to get enough chocolate. I know it’s a super cliche woman thing, but seriously, chocolate is my indulgence of choice. And these cookies are right up my alley. Going to forewarn you – they are amazingly addictive. Like, I made this recipe, ran out of cookies a few days later, and preceded to then make a whole other batch. They are a delicious cross between a brownie and a thin mint girl scout cookie. Seriously to-die-for. I especially liked them slightly chilled in the fridge. These should definitely top your “to-bake” list. They are simple to mix up, bake in no time, and will fulfill any chocolate craving you throw at them.

Peanut Butter Chocolate Chip Cookies

With the holidays quickly approaching, you undoubtedly will be inundated with lots of festive cookies. I love a good Christmas cookie as much as the next person, but I thought I would change it up a bit and instead give you my go-to cookie recipe. I have made these amazing peanut butter and chocolate chip cookies more times than I can count. Frequently, they’re made post dinner when that hankering for something sinful sets in. There simply is no better cravings cure than chocolate and peanut butter. The trick, and this applies to almost every cookie out there, is not to over bake them. I’m sure you will love this recipe just as much as I do. And hey, the diet doesn’t start until Jan. 1st anyways, right?

Sugar-Crusted Cocktail Party Brownies

These brownies are the perfect thing to bring or serve at a cocktail or dessert party. They meet all the criteria necessary for appropriate cocktail party eats:

Can be eaten with one hand – check!
Not messy – fudgey & rich, but no napkin necessary
Approachable, but a little more special than the usual – the extra sugar topping gives them an edge on your everyday brownie
Ample servings – this recipe makes a whole sheet pan worth of treats

The key is to use really good quality chocolate and not to over bake them. They are sure to be a hit!

Mocha Chocolate Icebox Cake

This is my absolute favorite summer dessert right now. It’s totally over-the-top, with layers of chocolate chip cookies and coffee & chocolate flavored whipped cream. I guarantee you will be running back to the fridge to grab more! It’s so simple to make – just a little whipping and layering, then leave it in the fridge overnight to soften the cookies (this is by far the hardest part). I recently brought this to a bbq and everyone loved it, so I promised I would post the recipe here. I can’t say enough good things about this cake, it’s so delicious!
