Please forgive me for the ugly picture. I just had to share these with you because they are awesomely delicious – bad picture be darned! I have a long going love for meat that can be thrown into the oven, forgotten about for a few hours, then popped out right at dinner time. I love the scrumptious smell that fills the house and gives off this impression that I’m working harder in the kitchen than I really am. Really, I’m cruising Gilt and ordering a bunch of cute shoes that I don’t really need, but don’t tell my husband that. These have a sort of sweet and sour Asian style thing going. A really unique, easy, and delicious rib recipe to add to your collection. These would be perfect for football watching!

Chicken & Broccoli Casserole

Casseroles get a bad rap. It’s such a shame, because they are a great meal option for the whole family. Most are easy to prepare, freeze and reheat well, and are pretty  portable. This recipe is one of our all-time favorites. I’ve seriously made this more times than I can count. It’s so simple and yummy. The kind of meal that gets addicting and you end up craving on random Tuesday nights. If you made a resolution to cook more at home this year, I would definitely recommend adding this one to your repertoire.  It’s cheesy and homey without being too heavy. It’s also a one-stop-shop for veggie, protein, and carb. Win for mom and fam!

Homestyle Chicken Noodle Soup

Happy New Year friends! I hope you all got in some much deserved R&R over the holidays. We had a great time with our families, but are happy to be home and back in the swing of things. A good handful of my friends seemed to have come down with a cold in recent days (no doubt all that holiday travel and stress has left us all a little susceptible to the cold and germs), so I thought I would share my recipe for chicken noodle soup. I’m not the biggest fan of chicken broth, so my version combines vegetable and chicken stock to give it a slightly different flavor. It’s really delicious, and super easy. If you have an extra Parmesan rind lying around (I freeze mine) be sure to throw it in, it does amazing things flavor wise! I have a lot of fun new things to share with you all for 2013, so stay tuned!

Navy Bean Soup

Happy Monday! We are still getting back to normal around here, after celebrating our first Thanksgiving in NYC. Although I’m going on 8 years in NYC, we’ve always hightailed it out of here around the holidays to go and visit family. This year we were lucky enough to have family come to us. I will put up some pictures and recipes from our Thanksgiving table later this week, but I wanted to quickly share this awesome way to use up your leftovers. This soup is a fantastic way to utilize a leftover ham bone. My mom makes it after nearly every holiday, and my husband especially loves it. It’s super easy and delicious. If you have additional ham left on the bone, it will just fall off into the soup, making it even more yummy (and probably salty, so watch how much you add). Hope you all had a wonderful Thanksgiving!

Baked Rigatoni with Sausage and Eggplant

This is the kind of meal you need in your life. Just the kind of thing you want to eat when it’s chilly outside. Earmark this one for when you are all turkeyed out in a few weeks, but still want something warm and satisfying. Feel free to use whatever kind of sausage you like – spicy if that’s your style, but in our house we stick with sweet Italian to appease the younger appetites (and we tend to be wimps where spice is concerned). The leftovers will be perfect to stick in your freezer or share with your (sure to be very appreciative) neighbors!

Honey Plum Soy Chicken

When I first met my husband, the only things he had in his fridge were beer, ketchup, and a large bottle of soy sauce. I’m sure he wasn’t the only bachelor to live this way, but I would like to think his culinary requirements have expanded since marrying me. Although we try and stay away from super salty dishes, I couldn’t resist trying this knowing that Brad would absolutely love it. I mean the recipe calls for an entire bottle of soy sauce. It practically had his name written on it, and I do aim to please every once in a while. I did knock the soy sauce down to about half (I just couldn’t bring myself to do the whole thing), and I can’t imagine it could have been more delicious. An easy and elegant meal for the soy sauce lover in your life.

Slow Cooker Tomato Soup

There’s not much that can beat a warm bowl of tomato soup and gooey grilled cheese. And this recipe is a real winner. It’s super flavorful and rich, but with just a touch of cream. I actually think this would be the perfect meal to feed your kids before a night of trick-or-treating. Give them something filling and nutritious to offset all that sugar! Using Halloween inspired cookie cutters to cut out the grilled cheese is sure to make it a hit with the little ones. Brandon (my toddler) absolutely devoured this – a rare occurrence that nearly warrants a parade.

We hope everyone in the northeast stays safe against Sandy. We are crossing our fingers that it is through NYC by Wednesday so as not to ruin the fun! I also don’t know how many days you can keep two kids inside without losing your mind…pray for me. :)

Slow Cooker Red Beans & Rice

Can you tell that I’m a little obsessed with my slow cooker? This puppy gets some major use around our house. And you are going to love this recipe! It’s so simple that my 2-year old seriously did 90% of the work.  Next time you don’t think you have time to make dinner, take 5 minutes in the morning and pop this in (and 20 seconds to soak the beans the night before), and you will be rewarded with a delicious, comforting meal that’s practically ready to go when you walk in the door. What makes this recipe extra special is the added ham hocks, which you can shred and leave in or remove once they are done cooking. You could also do sausage if that’s more your speed, but I love the smokiness from the ham.

If you want to make this super easy, heat up some frozen pre-cooked rice. The rice in the bag that you microwave is an option too, but personally, it gives me the hebegebees. Best option – get yourself a small rice cooker. I love ours and it takes out all the guesswork. Rice, water, hit button, (wait 20 minutes), done. Enjoy!
